So for day 2 of my T:25 challenge, I made fish tacos for dinner. Now, I love me some fish tacos as much as the next guy (at a restaurant) but touching the fish in an uncooked state is a whole different situation. I’ve made salmon in the oven but that’s about the extent of my fish adventures. This was a great way to push me into trying something out of my comfort zone. Picture looks a little dull because I didn’t have the pop of color with the salsa. I ate them before I realized I needed to take another picture!
You will need:
- Shredded cabbage
- Fish (I purchased wild Mahi Mahi frozen in fish taco style)
- Corn tortillas
- Sea Salt
- My Fit Foods Salsa
Wash and pat fish dry. Shred cabbage then cut avocado and mango slices. Preheat grill or broiler to high.(You can rub oil on the grill to prevent from sticking) Season your fish with paprika, sea salt, and pepper. Grill fish for 3 to 4 minutes (depending on size of fish pieces) and then turn and grill until flaky. Try not to cook the fish too long.
Remove fish from the grill and cut into slices. Place several pieces onto the tortilla and top with avocado, cabbage, salsa, and a squeeze of lime. Place mango slices on the side and you’re set. Try something new…You just may like it ;).
